Holiday Left-Over Sweet Potato Cake
I served it warm and with a generous sprinkling of confectioner’s sugar.
And it contains beer. I accidentally put in 1 cup instead of 1/2 cup…just took a bit longer to bake. Happily, we have beer on tap around here. My husband loves it when I use the kegerator.
Yesterday I thought that carrot cake sounded good, so I called my local cupcake store to see if they had any carrot cake cupcakes. Fortunately, that day's special was indeed carrot cake. I also picked up a few others to sample and we had them for dessert. I cut the cupcake into four pieces so my family could try some and, although they were not fond of some of the other flavors, they really liked the carrot cake one. Morgan said, “I thought that it was made with real carrots.” I said, “Do you like it?” She answered, “Yes.” So I said, “It is.” I think if I had told her beforehand, she would never have tried it.
Mmmmm…carrot cake with cream cheese frosting…if I didn't have three other HUGE sweet potatoes sitting in my kitchen, I might make that next.
