So what is a Holy Thursday Cake?
We always have a cake on Holy Thursday to celebrate the institution of the Eucharist and the Priesthood. Most years, it is leftover Mardi Gras cake pulled from the freezer. I don't know what happened with the Mardi Gras cake this year – I don't know if we had one…or maybe it was leftover birthday cake…
So, this year, we used a white cake mix from a box and made our own filling and icing.
